Cooking Substitutions      

In Place Of:    Use:
Whole or 2% milk

Skim or 1%

Evaporated Milk

Fat Free Evaporated Milk

1 c. Sour Cream

1 c. Lite or Fat Free Sour Cream or plain yogurt or 1 c. blenderized cottage cheese

Cream Cheese

Use combination of Fat Free and 1/3 Less Fat Cream Cheese

1 c. Mayonnaise

1 c. Light or fat free mayonnaise or 1 c. plain yogurt

Salad Dressing (mayonnaise type)

Light or fat free salad dressing

1 Egg

¼ c. Egg Beaters or 2 egg whites

Margarine

Replace equal amounts of unsweetened applesauce for margarine or use a combination of margarine and applesauce
Example: ½ c. margarine = ½ c. applesauce or ½ c. margarine = ¼ c. applesauce & ¼ c. margarine

1 c. shortening or lard

¾ c. vegetable oil

½ c. shortening

1/3 c. vegetable oil

1 c. cream

1 c. evaporated milk

Sugar

Reduce in many recipes up to ½ to ¼ of original amount
