Impossible Pumpkin Pie
(original recipe) Reduced Calorie Pie
¾ cup sugar ¾ cup sugar
½ cup Bisquick ½ cup light Bisquick
2 T. margarine omit margarine
1 (13oz.) can evaporated milk 1-13 oz. can fat free evaporated milk
2 eggs 4 egg whites or ½ cup Egg Beaters
1 (16 oz.) can pumpkin 1-16 oz. can pumpkin
1 tsp. Cinnamon 1 tsp. cinnamon
1/8 tsp. Ginger 1/8 tsp. ginger
1/8 tsp. Cloves 1/8 tsp. cloves
2 tsp. Vanilla 2 tsp. Vanilla
Directions: Mix all ingredients with electric mixer. Add evaporated milk last. Pour into sprayed round baking dish or deep dish pie plate. Bake at 350º for 50-55 minutes until knife inserted into center comes out clean. Yield: 10 servings.
Note: The original recipe has 8 gm fat/serving, the reduced fat recipe has .5 gm fat/serving.
