2 cans, black-eyed peas (rinse and drain)
1c. chopped green onion
1-4 oz jar pimento, drained
½ c diced green pepper
1 large bottle Italian Dressing (use fat-free and use just enough to cover)
dash garlic and cayenne pepper.
Mix all ingredients the day before. Serve with low fat tortilla chips or bagels cut into pieces.
